Thai Peanut Noodles
Okay, so I don’t know what’s necessarily Thai about this dish besides the name, but here goes. Plus it delays theory homework a little further. It’s a win win situation, really.
Boil 4 servings of your favorite shape of whole wheat pasta. Ready, go.
Take your pork tenderloin chunks and brown them in a skillet with a little olive oil. Brown. Remove onto a plate.
In your skillet, add a few scoops of peanut butter, crunchy would be better, and some Thai pepper sauce, to your liking, and a little honey just to take the edge off. Heat until thoroughly combined. Toss the pork back in, heating to coat.
Drain the noodles, you haven’t forgotten about them, have you? Toss them in the pan too. Coat.
Oh, if you want, steam some veggies (broccoli and green beans). Toss those in the pan with the noodles and peanut sauce.
Eat. Yum Yum.
