Courtney’s Caribbean-ish Black Beans ‘n’ Rice whilst in England
Boil 450 mL of water. Add 1 chicken bullion cube. Once that is dissolved, turn down to heat #2 (out of 6) and add 225 mL of rice. Put the lid on it and don’t touch, don’t look, don’t stir!
In your skillet, brown half a package of pork mince. Add lots of cumin and chili powder and a dash of salt.
Wait for Daniel to get back from the store. In the meantime, try the rice!
Rinse 1 can of black beans. Toss that in with the meat. Add 1 can of diced tomatoes in garlic and yum juices. Toss. Dump in the rice. Toss. Add 3/4 of a bulb of garlic. Toss.
Chop 1 onion and cook in the rice pan until it starts to get soft. Chop 1 bunch of cilantro and add to meat and rice. Toss. Dump in the onions from the pot to the skillet. Toss.
Add lime, if Daniel remembers it from the store. Toss.
Eat it like it’s good. Mostly because it is.
